At Bib’s Barbeque they say “It’s not eastern, it’s not western, it’s Bestern”
The choice is difficult at Bib’s BBQ in downtown Winston-Salem. They also have brisket, smoked sausage, and ribs.
They hickory smoke their meat. That’s important. As one BBQ scholar once said “If it’s not hickory smoked, then it’s just cooked pork”. True BBQ by North Carolina standards, is hickory smoked.
